Fresh new flavours at Merthyr Bowls Club

With a background spanning classical French, Mediterranean and gastropub-style cooking, Thornton’s focus is on quality ingredients, generous flavours and food that suits Merthyr’s riverside setting. From casual lunches to shared plates with friends, his influence brings a renewed sense of warmth and character to the club kitchen.

Chef Thornton Farmer

Executive Chef Thornton Farmer brings more than 23 years of experience to Merthyr Bowls Club, with a background in classical French and Mediterranean cuisine.

A 5th-generation chef, Thornton has worked across award-winning kitchens and 4–5 star hotels, with career highlights including Best Schnitzel in South Australia and Best Wedding Chef two years running.

His new menu blends gastropub favourites with Mediterranean-inspired share plates, fresh seafood and locally sourced ingredients, all designed to suit Merthyr’s relaxed riverside setting.

"A great venue for catering large events. We held a combined birthday here with 40 guests fitting very comfortably in the back area towards the smokers section. The staff were very accommodating from the moment I engaged with them via email and remained hospitable the entire duration of our booking. Our age group ranged from 14 - 50 and despite this experience being a first for most of us, we all loved it!"

What a great find...not only is it a great location to sit by the river and enjoy a quiet ale...the food was next level. With an order that included 4 variations of wellness for the 300gm steak (Thurday special at $25) ordered, chef hit the mark! Best char I have had on a rare steak for a long time...and, the medium, medium-rare amd medium-well were perfectly cooked for the group. Make sure you ask the staff for wine selection...they are happy to offer up advice and have a nice range. Will definitely be back...
