Fresh new flavours at Merthyr Bowls Club

With a background spanning classical French, Mediterranean and gastropub-style cooking, Thornton’s focus is on quality ingredients, generous flavours and food that suits Merthyr’s riverside setting. From casual lunches to shared plates with friends, his influence brings a renewed sense of warmth and character to the club kitchen.

Chef Thornton Farmer

Executive Chef Thornton Farmer brings more than 23 years of experience to Merthyr Bowls Club, with a background in classical French and Mediterranean cuisine.

 

A 5th-generation chef, Thornton has worked across award-winning kitchens and 4–5 star hotels, with career highlights including Best Schnitzel in South Australia and Best Wedding Chef two years running.

 

His new menu blends gastropub favourites with Mediterranean-inspired share plates, fresh seafood and locally sourced ingredients, all designed to suit Merthyr’s relaxed riverside setting.
